HAPPY MONDAY!
I was off of school today for President’s Day, so I thought it would be a great idea to try a new breakfast recipe from my favorite healthy cookbook, Fixate. This book is seriously the great and every recipe I’ve made from it so far has been perfectly delicious. Unfortunately that was not the case today, because I had a serious #BreakfastFail!!
I attempted to make the “21 Day Fix Chocolate Protein Crepes” recipe made by Autumn Calabrese. I swear that I followed the recipe exactly as written and didn’t substitute ANY of the ingredients (although I am known for throwing together recipes with random items I have in the kitchen), but it didn’t turn out the way it was supposed to at. all.
I gathered all of the ingredients: a scoop of chocolate whey protein powder, a cup of greek yogurt, a cup of egg whites, 1/2 a teaspoon of vanilla extract, and stevia to taste. I whipped all of the ingredients together, tasted the batter, and thought “wow, I am a really great chef…”
I poured 1/4 cup of the mix into the pan, on medium high heat as I was supposed to.
But once it came time to flip the crepe, I was met with a stressful failure of a situation. I threw away my first three crepes until I realized that it was just not going to work for me and…
I settled for this! LOL! A pile of chocolate crepey-ness topped with a cup of blueberries and blackberries. I mean, it was still delicious and healthy but I definitely didn’t make crepes.

I topped it off with a little whipped cream and ate it while I hopped onto our team call. If anyone has ever successfully made crepes and can explain to me what led to my failure, please comment below because I clearly need all of the help I can get! (insert embarrassed facepalm here).
